Crozier Blue is a rich blue sheep milk cheese and has been made by the Grubb family at their farm in Tipperary since 1992. It is a sister cheese to Cashel Blue. It has a rich, full and well-rounded flavour. It is gently salty with a distinctly rich creamy texture, offset by a touch of spice.
People are often surprised by how much they like Crozier Blue - those unfamiliar with sheep’s milk cheese assume it to have a farmyard flavour which is not present. It has been favourably compared to the great French ewes milk blue cheese, Roquefort.
It is delicious with roasted pears and a fine glass of Sauternes.
